Work Out Nancy Walker Healthy Eating





Lentil Stew  
(from my daughter’s Sunday School class)

Perhaps this is the recipe Jacob used to persuade Esau to give up his birthright…or maybe not.  Either way, it is incredibly easy to make.  If you don’t have time to make it 
when you get home, just throw it in your slow cooker before leaving for work.  
The raisins may seem a little strange to add, but they really 
make the stew so don’t skip them.




Ingredients

  • 2 C dried lentils (about 1 lb)
  • ½ C brown rice
  • 1 can diced tomatoes
  • 1 onion diced
  • ½ tspn garlic powder
  • 5 ½ C water – or vegetable broth
  • 1 C frozen chopped spinach
  • 1 tspn cumin
  • ½ tspn chili powder
  • ½ C raisins

Preparation: 

    1. Rinse and drain lentils and rice
    2. Sauté onion in a  small amount of water until tender
    3. Add all remaining ingredients, except raisins, to your slow cooker and cook on low for 6-8 hours or on high for 2-4. (You can also cook this on your stove top – just bring to a boil, reduce heat and simmer for 35 minutes.)
    4. Add raisins and let simmer for another 5-10 minutes.
    5. Serve and enjoy!
