Pear Pie 

This is our all time favorite pie.  We have eaten it for years with the bottom crust.
Recently, I decided to forgo the crust out of sheer laziness.
What a treat it was!  Simply reduce the total cooking time
by 25 minutes if you exclude the crust.
 

Ingredients

  • 1 unbaked pie crust in deep dish pie pan (optional)

Filling:

  • ½ C packed brown sugar
  • 2 T cornstarch
  • ½ tspn cinnamon
  • ¼ tspn ground ginger
  • 1/8 tspn ground nutmeg
  • 6 C thinly sliced peeled pears
  • 1 T lemon juice

Topping

  • 2/3 C all-purpose flour
  • 1/3 C packed brown sugar
  • 1/3 C Earth Balance

 Preparation:

  1. Preheat oven to 400 degrees.
  2. Combine filling ingredients and spoon into crust (if used).  Bake at 400 degrees for 25 minutes.
  3. Meanwhile, combine the topping ingredients until crumbly.
  4. Sprinkle over the filling and return to oven for another 40 minutes.
