Black-eyed Pea Salad


Ingredients


  • 2 - 15 oz cans black-eyed peas, rinsed and drained
  • 1 can shoepeg corn, rinsed and drained
  • 1 green pepper, diced
  • 4 scallions, diced
  • 2 or 3 tomatoes, seeded and diced
  • ½ large purple onion, diced
  • 2 cloves garlic, minced
  • 8 oz bottle of fat free Italian dressing

Preparation

  1. Combine all ingredients in a large bowl.
  2. Chill and serve.
