Minestrone Soup

Ingredients

  •  1 c onion, chopped
  •  ½ c celery, sliced
  •  2 med garlic cloves minced or 2 ½ tsp pre-minced in jar
  •  6 c water
  •  1 T chicken-style seasoning
  •  2 tsp basil, (or) 2 T fresh basil
  •  1 ½ tsp seasoned salt
  •  1 ½ tsp Sucanat
  •  1 tsp onion powder
  •  ½ tsp coriander
  •  1/16 tsp oregano
  •  1 small bay leaf
  •  1 –2 c kidney or red beans, canned
  •  2 c diced tomatoes, canned
  •  ½ - 1 c whole wheat macaroni, elbow or shell
  •  2 c zucchini, sliced or quartered
  •  1 c carrots, sliced

Preparation

  1. In a large saucepan, sauté onion, celery and garlic in small amount of water until
  2. tender.
  3. Add 6 cups of water, seasonings and beans.
  4. Bring to a boil.
  5. Lower heat, cover and simmer about 20 minutes.
  6. Add tomatoes and macaroni, cover and simmer about 10 minutes.
  7. Add zucchini and carrots and simmer 5 to 10 minutes more or until pasta and
  8. vegetables are tender.
  9. Remove bay leaf before serving.
