It's been an interesting month at our house.  The weather has been hot, our grocery store stopped carrying our favorite vegan ice cream and our youngest son got his first set of braces on.  So - what do all these thing have to do with one another? At first glance it might seem a little strange, but I have been on a quest to create soft, cold and tasty foods that all of us can enjoy - including our youngest who wants to eat everything through a straw lately.  Praise God, his teeth are getting better and I am getting used to putting his rubber bands on without the use of reading glasses, crochet hooks, flashlights and his head in my lap.  There is hope!  I have also recently created some new smoothies - which are more like ice cream - and a new cheese-like sauce that is out of this world.  I hope you enjoy them as much as we have.

Chocolate Peanut Butter Smoothie - eat your heart out Del's freeze!  Del's is an old fashioned soft serve ice cream store that has served our community for over 35 years.  Back when we indulged in ice cream, they had a terrific chocolate, peanut butter twist cone which rivaled a Reese's peanut butter cup. Although this smoothie isn't quite thick enough to serve in a cone, it is super delicious. Tropical Peach Smoothie - This was my son's creation that the whole family has come to list as their favorite smoothie.  It is wonderfully refreshing on a hot summer day and it has just a hint of tropical taste. Click here for the recipe.

"Cheese" Sauce -  I have finally made the perfect "cheese sauce" which is made from whole foods and pleases everyone who has tasted it.  It has taken me over 9 years to find and perfect a "cheese" sauce that is easy, does not use difficult ingredient to find, and reminds me of those childhood days when I loved Kraft dinner, Velveeta cheese and Cheez Whiz.  No, I was not a gourmet when I was younger and although I hate to admit it, I even enjoyed "cheese in a can".  Don't let that deter you from trying this sauce.  I believe it will be a hit with everyone. Click here for the recipe.

All of these recipes were made in my Vita-Mix. You can use any
high speed blender, or check out the benefits of a Vita-Mix here.
