  Labor Day Weekend is here and I hope and pray that all of you are enjoying some quiet time with your family and friends before the start of the school year - although for many of us school started several weeks ago.  We live in Florida where the weather is really hot so we home school during the summer and take some time off during the winter.  Even though school has been going on for us for quite a while, we are still planning on some fun during the weekend.  Between baseball games, family visits, swimming and cleaning out the garage, we are planning on doing a minimum of cooking and a lot of eating.  Below are the recipes we will be enjoying over the holiday weekend.  Some are fairly new and others have been our favorites for years.  Try them, enjoy them and have a wonderful weekend!

Spinach Dip - If you are a fan of  that traditional spinach dip served at holiday parties - but don't like the fat and cholesterol - you will LOVE this one!
 
Cheese sauce - I have finally made the perfect "cheese sauce" which is made from whole foods and pleases everyone who has tasted it. It has taken me over 9 years to find and perfect a "cheese" sauce that is easy, does not use difficult-to-find ingredients
 
Not Your Ordinary Potato Salad - This is my son's favorite salad this year. I was used to potato salad with a lot of mayonnaise, sweet relish and onions so this was a real change for us - but we all love it now.

 

Black Bean Mango Salad - Refreshing and tropical.
 
"Chicken" Salad - Great substitute for an old standby.
 
Guacamole - One of my favorites - this provides lots of "good" fats...and it's soooo easy!


Key Lime Pie - My family can not get enough of this pie. Just right for a picnic weekend!
 

Pear Crisp - I developed this recipe when we had a craving for pear pie, but I was too busy that day to take the time to make a pie crust. This fits the bill!  It is fast, easy and really tasty.
