Cheese Sauce

I have finally made what I think is the perfect “cheese sauce” which is made from whole foods and pleases everyone who has tasted it.  It has taken me over 9 years to find and perfect a “cheese” sauce that is easy, does not use difficult-to-find ingredients , and reminds me of those childhood days when I loved Kraft dinner, Velveeta cheese and Cheez Whiz.  No, I was not a gourmet when I was younger and although I hate to admit it, I even enjoyed “cheese in a can”.  Don’t let that deter you from trying this sauce.  I believe it will be a hit with everyone.

Ingredients:

  • 1 onion, chopped
  • 1 potato, peeled and chopped
  • 1 carrot, chopped
  • ½ red, orange or yellow sweet pepper, chopped
  • 1 T fresh garlic or 1 tspn garlic powder
  • ½ C raw cashews
  • 1 ½ tspn lemon or lime juice
  • ½ – 1 tspn Dijon mustard
  • 2 T Earth Balance
  • 1 tspn salt

Directions:

  1. Throw onion, potato, carrot and bell pepper into a pot with water.  Cook until tender.
  2. Place raw cashews, garlic, lemon or lime juice, mustard, Earth Balance, salt and ½ cup vegetable cooking water into a Vita-Mix or blender and process until smooth.
  3. Add the cooked vegetables, without the broth, to the Vita-Mix or blender.  Continue processing until smooth, adding more vegetable cooking water if mixture is too thick.
  4. Use as a topping for macaroni, broccoli, potatoes or anything you like.  Be adventurous and add a little salsa for a healthy queso sauce.
