Rice Pudding

 A healthier version of an old-time favorite

Ingredients:

  • 3 C leftover cooked brown rice
  • 1 C sugar
  • ½ tspn salt
  • ½ tspn nutmeg
  • 3 C soymilk or almond milk
  • 1 ½ T Earth Balance
  • 1 tspn vanilla
  • 1 tspn cinnamon
  • ½ C raisins (optional)

 

Preparation:

  1. Preheat oven to 350 degrees.  
  2. Combine all ingredients in a greased baking dish.  
  3. Bake for approximately 1 to 1 ½ hours, stirring every 15 minutes if possible.  
  4. Serve warm.
