Pumpkin Soup

Ingredients

  •  2 lbs fresh pumpkin, steamed and mashed (or canned)
  •  ¼ c water
  •  1 large onion, chopped
  •  1 tsp minced fresh ginger root
  •  1 apple, peeled and chopped
  •  2 large potatoes, diced
  •  ½ T curry powder
  •  ½ tsp cinnamon
  •  ½ c soy milk
  •  3 c vegetable broth

Preparation

    1. Sauté onion and ginger root in the water until soft.
    2. Add all ingredients except pumpkin and soy milk and simmer approximately 10-
    3. 15 minutes.
    4. Stir in pumpkin and heat for another 10 minutes (until mixture has a smooth
    5. consistency.)
    6. Stir in soy milk and serve.
